Top British chef Oliver Marlowe has revealed the trick to making perfect pancakes
Oliver Marlowe, head chef and owner of London's Ganymede restaurant, shared his best culinary tips, and the pro also revealed a trick for perfect pancake mix.
Oliver recommends making the pancake mix one day in advance and leave it in the refrigerator overnight, writes "Mirror".
"Resting the mixture is the most important step towards delicious pancakes. This procedure allows the gluten to rest. What happens overnight is that all the gluten you mixed into the pancake mix relaxes. The mixture thus increases and becomes airy," the chef explained.
Oliver stated that this allows all lumps to disappear. Also, you won't have to mix the mixture too much, and the pancakes will rise more easily when you start baking them, i.e. frying them.

The chef adds that not letting the pancake mix sit is often the main reason why the first pancake is bad and has to be thrown away.
Another tip from the famous chef for great pancakes is to use milk and eggs that are at room temperature, rather than taking them straight from the fridge.
