– 1 kilogram of spinach

About the sauce:
- 1 tablespoon butter
– 2 tablespoons of grated onion
– a little hot ground pepper
– a pinch of nutmeg
– 1 teaspoon of grated lemon peel
– 3/4 cup of cooking cream
– 2 tablespoons of parmesan
Place the olive oil and spinach in a deep saucepan, then simmer for a minute or two, then stir. When the spinach is cooked, strain it and place it on a towel to drain well. Melt the butter, then fry the grated onion. Salt, pepper, sprinkle with ground pepper, nutmeg and grated lemon peel. Pour in the cooking cream, stir and when it boils, add the chopped spinach. Mix well and sprinkle with Parmesan cheese. Leave on the hotplate for another 2 minutes, then serve.
