You can eat potato salad all year round, and it is a great side dish with fish. Every country has its own recipe for potato salad. We usually prepare it with onions and just season it, and now we bring you the perfect Greek recipe for potato salad.

Greeks make potato salad in a similar way as we do, but what makes it different is the dressing.

– 1,3 kg of young potatoes
– 1 small purple onion
- 3 young onions
- 1 bunch of parsley
– 1 bunch of dill
– 100 grams of olives
- salt

About the dressing:

– ¼ cup of wine vinegar
- 2 teaspoons of mustard
– 1½ teaspoons of oregano
- 2 cloves of garlic
– 1½ teaspoons of salt
– ¼ teaspoon of pepper
– ½ cup of cold pressed olive oil

Wash the potatoes well and put them in a pot. Then cover with water and salt. Cook until the potatoes are tender. A young potato does not take much time to boil.

Mix vinegar, mustard, oregano, garlic, salt and pepper in a bowl. Slowly pour in the olive oil, then mix everything well to combine the ingredients well.

Drain the potatoes and let them cool in a colander. Cut the potatoes in half and put them in the bowl in which you will serve the salad. Add the chopped purple onion, as well as the scallions, parsley, dill and olives. Mix everything well, then pour the dressing and mix again. If necessary, season a little more.
