Juicy cake with lemon and elderberry

Ingredients needed:
About the database:
- 250 g unsalted butter (very soft)
- 200 g of sugar
- grated peel of 3 lemons
- 3 eggs
- 250 g flour
- 1 and a half teaspoon of baking powder
- a quarter teaspoon of salt
- 100 ml of milk

About the dressing:
- 3 tablespoons lemon juice
- 100 ml of elderberry syrup

For the glaze:
- 250 g of powdered sugar
- 2 tablespoons lemon juice

Preparation:

Turn the oven to 175 degrees and while it heats up, start cooking. Coat the mold (25x10 cm) with butter and put baking paper (on the bottom and on the sides) to protrude slightly from the oven (to make it easier to remove the cake later). Then start making the base. Beat the butter and sugar, add the grated lemon peel and one egg at a time, taking care of each well-beaten one before adding the other. In another bowl, mix the flour, baking powder and salt, then mix half of the mixture with the butter and the rest. When the mixture is well combined, add the milk, and then the remaining flour mixture. Stir the mixture a little more and transfer it to the prepared baking dish, flatten and bake for 50 minutes to an hour, check with a toothpick, so that the toothpick comes out clean from the dough. Make the dressing by mixing elderberry syrup and lemon salt - place it on the finished biscuit, but first make small holes for the liquid to penetrate deeper into the cake which will later make it pointed. After that, it's time to make the icing - whisk all the mentioned ingredients to mix well, then apply it on the cake after you take it out of the mold.
