Lean Italian Potato Soup Recipe, a tasty dish with cheap groceries

Ingredients:
- 6 potatoes
- 2 onions
- 2 carrots
– 2 sticks of celery
- 1 can of chopped pelate (tomatoes)
- 1,5 liter of water
- 1 bay leaf
1,5 teaspoons of Italian spices
- 1 bunch of parsley
– parmesan (optional)
Preparation:
Pour water into the pot, then add one onion that you cut in half, one peeled carrot, a bay leaf and a few peppercorns. Cook until it boils, then reduce the heat and cook for another 20 minutes. Then, remove the vegetables, pepper and bay leaf. In another pan, fry the finely chopped onion, carrot and celery in a little oil. Add the peeled and chopped potatoes, then pour the bouillon (vegetable) from the soup. Add the peel, salt, pepper, Italian seasoning and mix. Let it boil, then reduce the temperature and cook for another 20 minutes. When cooked, add chopped parsley and sprinkle with grated parmesan or hard cheese if desired.
