Roasted Red Peppers Recipe: Winter can't go by without this delicious pickle
Red peppers are synonymous with autumn in Macedonia, they provide a rich taste, and their preparation for winter, like iron peppers, is a tradition that has lasted for decades.
To prepare this delicious and healthy pickle, which you will enjoy until March, you do not need many ingredients or sachets with preservatives.
This nutritious vegetable is rich in vitamins and minerals, and numerous studies have confirmed the health benefits of eating red peppers. They contribute to the prevention of cardiovascular diseases, improvement of eyesight, bone health, strengthening of immunity and protection against various diseases.

Ingredients:
- 5 kg of red peppers
– 2 heads of garlic
- 500 ml of oil
- 200 grams of salt
- 100 grams of sugar
– 1 teaspoon of peppercorns
- 1 bunch of parsley
Preparation:
Wash the peppers, remove the seeds and cut them into thick strips. Arrange the pepper strips on the bottom of the bowl, sprinkle them with salt and sugar, then pour a little oil and vinegar over them. Arrange the peppers, then the ingredients again, repeating the process until you have used up all the ingredients.
Let the peppers sit overnight, then arrange in sterilized jars. Add finely chopped garlic, pepper and parsley between the rows. Pour over the liquid in which the peppers were standing and press them with a plastic grid.
Store the jars in a cool, dark place and enjoy the rich flavor throughout the winter. K. A.
