Recipe for a cheap and easy lunch: Zucchini and peppers baked with cheese and eggs

Nice weather is coming and then instead of strong and greasy food we want something lighter. The season for a variety of fruits and vegetables is slowly starting, but you can find zucchini all year round. Our suggestion for today's lunch is to make a delicious vegetable dish topped with cheese and eggs.

The preparation of this dish is so easy, all you have to do is briefly fry the courgettes, peppers and other vegetables, then mix them with the egg mixture and bake them in the oven.

Ingredients:

- 1 head of red onion
- olive oil
- 2-3 carrots
- 2 peppers
– 2-3 zucchini
- 3 eggs
- 300 milliliters of milk
- 4 tablespoons of flour
– 200 grams of hard cheese

Preparation:

Chop the onion more coarsely, then fry it in a little olive oil, then add the chopped carrot. Stir, and after 5 minutes add the chopped pepper. When the vegetables are soft, add the chopped zucchini, salt and pepper, then cover and simmer for 12 minutes. Season the eggs with salt and pepper, then beat them, then add the milk and grated cheese. Mix well. Arrange the vegetables in a fireproof bowl greased with oil, then pour over the egg and cheese mixture. Mix a little and bake in a preheated oven at 180 degrees for about 35 minutes.
