RECIPE | No need to turn on the oven: Blueberry cheesecake
Now is the blueberry season and the ideal time is to make a delicious cheesecake that you do not have to bake. It is easy to make, the taste is refreshing, and blueberries improve the blood picture and are great for detoxifying the body, even in a sweet edition.
Ingredients needed:
-200 g biscuits
-80 g butter, melted
-300 g blueberries
-25 g sugar
-1 tablespoon lemon juice
-20 g gelatin + 60 ml cold water
-450 g cream cheese
-125 g powdered sugar
-160 ml sweet sour cream
-1 teaspoon vanilla extract
For dressing:
-15 g gelatin + 40 ml cold water
-180 g blueberries
-25 g sugar + 70 ml water
Preparation:
- Mix the crushed biscuits and melted butter, then make a crust by pressing the mixture into the mold. Mix the blueberries with the sugar and lemon juice, cook briefly, then combine with a blender.
- Mix gelatin with water and in the meantime whip cream cheese with powdered sugar. Add sour cream and vanilla extract to the cream cheese, then whisk again.
- Add 2 tablespoons of blueberry filling to the melted gelatin, mix well, then pour the remaining blueberry filling and mix well.
- Add the gelatin mixture to the cream cheese mixture and mix well. Pour the filling over the biscuit crust, then leave the cheesecake in the fridge for an hour.
About the dressing:
- Mix gelatin (15 g) with water (40 ml) and set aside. Mix blueberries (180 g) with sugar (25 g) and water (70 ml) and bring to the boil. When it boils, remove from the stove and combine with a blender. Add gelatin and stir, then cool to room temperature. Pour over the cheesecake and leave overnight in the fridge.
