Try Stefanija Nestorovska's recipe – lean apple pie

Thanks to the skillful hands and ingenuity of the young woman Stefanija Nestorovska what is behind instagram profile and the blog snestorovska.com, we always have the opportunity to try something interesting and unusual. Today, enjoy the unique taste of this dessert - lean apple pie

Ingredients:

– 7 apples (I used green ones)
– 1/2 cup (95 grams) of coconut sugar
– 1 cup (140 grams) spelled flour
– 3/4 cup (100 grams) semolina
– half a packet of baking powder
- 3 teaspoons of cinnamon
– 4 tablespoons of neutral oil

Preparation:

Heat the oven to 250 degrees and grease a baking pan. I used a 20x20 square ceramic pan, but you can use any baking pan. It would even be better if it were a little bigger so that the pie would come out a little thinner.
The apples are grated. You can use anything, but I like the texture of grated apples. I used them with the skin on, just washed well, because mine were unpeeled and organic apples. If you don't feel good eating them like that, feel free to peel them.
In a large, deep bowl, add the flour, semolina, cinnamon, baking powder and coconut sugar and mix well to combine.
Add one third of the dry mixture with flour to the baking pan, then add one third of the grated apples on top, then add one third of the dry mixture, then again one third of the grated apples and finally another layer of both.
I know this method is a bit strange and adding dry flour directly, but trust me, it will all combine with the juiciness of the apples in the end.
If desired, you can also add chopped walnuts between a layer. It gives the pie a delicious crunchy taste.
At the end, it is finished with a layer of grated apples and it is well covered.
Pour the oil on top and bake for 20 minutes, reduce the temperature to 150 degrees and bake for an additional 30 minutes.
Allow to cool well before slicing. This is crucial, because otherwise the whole thing will fall apart. It must be well chilled to set and get nice pieces.
The pie can be kept at room temperature for 2 days or in the refrigerator for up to 5 days.

Notes and tips:

→ You can replace the coconut sugar with another sweetener, but ideally it should be in granules. I could not confirm about liquid sweetener.

→ Spelled flour can be replaced with other flour such as wholemeal, rye or oat flour in the same amount. To replace other healthy flours - you can try, but I wouldn't be able to tell you for sure.
