Try Diana Ivanoska's recipe for homemade gnocchi

She started sharing her recipes with her followers and friends since the beginning of the pandemic.

"I love every part of the process, but I enjoy photographing the food the most," Diana reveals.

Today, the inventive Diana shares a recipe for a gastronomic treat - homemade gnocchi.

"Gnocchi is Italian pasta that has potatoes and flour in its composition. They themselves have a neutral taste and are an excellent base for any sauce. You can combine them with whatever your heart desires. Parmesan, cherry tomatoes, mushrooms. In the composition itself, apart from the basic flour and potatoes, you can also add an egg, herbs, the options are endless. This recipe is very simple, lean with only three ingredients. Be sure to try them," says Diana.

Ingredients:

– 450-500 grams of potatoes
– 300-350 grams of flour
- salt

Preparation:

Boil the potatoes. Peel them while hot. Grate them finely. Potatoes can also be mashed. I grated them. Add salt as desired and add the flour. The measurements are not precise. Add enough flour to make a workable dough without sticking to your hands.
Wrap the dough in cling film and let it rest for 10 minutes. Take pieces of the dough. Form into oblong shapes and cut into small pieces 2 to 3 cm long. Form the gnocchi. You can just press them in the middle with your finger or run each piece with the back of a fork to get the characteristic gnocchi shape. I used a small gnocchi board because I'm a fan of kitchen gadgets. The shape, that is, the lines of the gnocchi serve to keep the sauce on them or whatever they are prepared with.
Boil water and put the gnocchi in it to cook. When they float to the surface, they are done. Remove them with a spoon strainer.
You can fry the gnocchi in a little olive oil until golden brown. Add sauce and toppings as desired and enjoy.
