Ingredients:

– 500 grams of chicken breast, boiled
-1/2 cup peanuts**
– 1/2 cup pickles
- 2 cans (300 grams) of Greek yogurt
- 1 teaspoon mustard
- salt and pepper if desired
** I like to toast the peanuts in the oven before using them. I buy salted, unroasted peanuts and just put them in the oven (without oil) at 160 degrees for about 10-12 minutes. An extra step, but they taste amazing.

Method of preparation:

Cut the chicken breast into small pieces. Peanuts are chopped (or pounded), as are pickles, which are cut into small cubes. All ingredients are added to a large, deep bowl.
Add all other ingredients and mix well until combined. Taste and add more spices if needed.
You can store the salad in a closed, glass container for up to 4 days.
