Lean and easy: Lebanese salad with parsley
Tabbouleh is a delicious traditional salad from Lebanon, which is prepared with bulgur and fresh parsley as the main ingredient.
This salad is great for the upcoming holidays when you feel the desire for something refreshing and very nutritious. Parsley helps flush out carcinogens, mint helps with digestion, and lemon boosts the immune system.
Also, tabbouleh is a perfect side dish for fish, which is part of the fasting sofra of believers who practice the Christmas fast.
- 2 large bunches of parsley
- 130 g of bulgur
- 100 ml of boiling water
- 6 thin slices of spring onion
- 3 large tomatoes
- 2 teaspoons of dry mint
- teaspoon salt, pepper to taste
- about 80 ml of olive oil
- squeezed juice of one lemon
Wash the parsley bunches well and finely chop the leaves.
Then, put the bulgur in a separate bowl and submerge it in boiling water. Let it absorb the water while you prepare the rest of the ingredients. It will quickly absorb the liquid and do not add more water if you notice that it is dry. Before adding it to the salad, shred the bulgur with a fork.
Wash the tomatoes, cut them into smaller cubes, then add them to the bowl with the other ingredients. Then, wash the young onions and cut them into small circles. Squeeze one lemon and add it to the salad.
Put all the necessary ingredients in a large bowl, mix them well and season with dry mint, salt and pepper. Finally, add the olive oil.
