A different chicken soup: Soto-Medan is a warm exotic hug

A type of stew that combines chicken or beef with a creamy broth enriched with coconut milk and a myriad of different spices and herbs such as galangal, turmeric, ginger and coriander. The meat is cooked, then cut and fried before soaking in a delicious soup.

The soto is seasoned with various spices such as boiled eggs, shrimp crackers, fried potatoes or fried onions, while rice is usually served on the side. As its name suggests, this type of "soto" originates from the city of Medan, where it is considered an official dish and a much sought after regional delicacy.

Ingredients needed:

- 4,5 chicken drumsticks
- 1 tablespoon oil
- 4 cups of chicken broth
- 1 cube of chicken broth
- 1 glass of coconut milk
- Salt and sugar to taste

About the pasta:
- 4 cloves of garlic
- 3 onions
- 1 teaspoon of coriander
- 1/2 teaspoon black pepper
- 2 tablespoons turmeric powder
- 1/2 teaspoon chopped ginger

Other herbs and spices:
- 4 bay leaves
- 4 legumes of cardamom
- 3 cloves
- grated lemon peel

Method of preparation:

Preparation of paste:

- Put all the ingredients for the paste in a food processor, except the turmeric powder. Process them into a paste and then add turmeric. That way you will not contaminate the dish with the food processor.

Preparation of soup:

- Bring 4 glasses of water to a boil. Add chicken pieces, lower the temperature and simmer for about 30 minutes. Remove the chicken and set aside. Save the liquid and cut the meat when it is cold enough.
Meanwhile, heat a little oil in a large saucepan and fry the pasta you prepared before, cardamom, cloves and lemon peel until fragrant, about 5 minutes. Add the bay leaves and continue frying for a few more minutes until the spice smells.
- Pour the cooking liquid from the chicken and chicken broth into the pot and let it boil for about 15 minutes. Drain the liquid and discard the spices (use them only to season the broth). Add coconut milk and let it heat up, but do not let it boil. Taste and season with more salt and a little sugar to your liking.
