Tomatoes also contain beta-carotene, each molecule of which is converted in the liver into two molecules of vitamin A and carotene lycopene, which gives the tomato its characteristic intense red color. Both ingredients are anti-carcinogenic.

Which means that the reasons to consume this sunny fruit are numerous. And, in order to enjoy its taste and benefits during the cold months, make a tomato winter garden in time.

In addition to tomato juice, which is irreplaceable in Macedonian cuisine, housewives in the season of this vegetable must also make homemade ground tomato for the winter.

Each one has its own recipe, and we are giving you a way to prepare ground tomatoes that will last up to two years.

Ingredients:

- 10 kg of tomatoes
– 5 level spoons of salt
– a bag of grapes
– 2 bunches of parsley

Preparation:

Wash the tomatoes, clean the area around the stems, then cut the fruits into large pieces and grind them in a meat grinder. When grinding, use the coarsest sieve so that the tomatoes do not turn into juice.

Pour the ground tomatoes into a large pot, add salt, the grapes and the parsley leaves that you cut earlier. Mix everything well with a large wooden spoon and let it stand for at least two hours.

Mix the tomatoes well once more, then pour them into jars or glass bottles with a wide opening, close hermetically and store them in a cool place.

If you want a spicy taste, grind some hot peppers together with the tomatoes.
