Impossible Pie: An Irresistibly Simple Coconut Dessert
"The impossible pie" is so easy to prepare that it is almost "impossible" to eat it the recipe. This recipe originates from the USA, and is also a favorite in Australia, where it is traditionally served with coffee and a scoop of ice cream. It's good to keep in mind that the pie will rise during baking and then, once it starts to cool, it will "flatten".
To make it easier to cut, you can leave it in the refrigerator to set before serving. Although it is most often prepared with coconut, the impossible pie is also a favorite with apples, lemon, and even vegetables such as spinach and Swiss chard.
Ingredients:
- 4 eggs
- 3/4 cup sugar
– 4 tablespoons of softened butter
- 1 teaspoon of vanilla extract
– 1/2 teaspoon ground nutmeg
– 1/2 cup of flour
- 2 glasses of milk
– 1 cup of coconut
Preparation:
Eggs, sugar, butter and vanilla are beaten with a mixer. Add the nutmeg, flour and milk and mix well. Stir in the coconut with a spoon. Put a little oil on the baking tray and pour the mixture. The pie is baked in a heated oven at 180 degrees for about 55 minutes. Use a toothpick to check it's done, then take it out to cool. Decorate as desired and serve only after it has cooled down well.
