Irresistible Georgian pancakes from which leagues will flow
These rustic egg pancakes filled with melted cheese illustrate the type of food that Georgians living in high altitudes in the mountains needed and needed. The butter and cottage cheese filling is called caviar. It is so rich that pancakes can be cooked in an almost dry pan.
- 2 eggs
- 1/3 cup sugar
- 1 cup ricotta or cottage cheese
- 1 field of flour

- 1 tablespoon vanilla extract

- 1/2 cup frying oil
Method of preparation:
In a medium bowl, whisk the eggs and sugar. Add ricotta or cottage cheese, baking soda, lemon juice / vinegar, vanilla extract, salt and flour. Mix well - the dough must have the consistency of pastry dough.
Heat about 2 tablespoons of oil in a pan and add the dough. Do not overload the pan, leave space between the pancakes. Cook over medium-low heat until bubbles form and edges are formed, about 3-4 minutes. Turn over and cook on the other side.
- You can add lemon peel, pieces of chocolate, bananas, apples and the like to the dough.
