Ideal side dish for summer days: Oriental salad
On summer days, refreshing salads are an excellent choice as a perfect side dish to the main course. The oriental salad is one of the favorites in these hot days. In addition to serving it as a side dish at the family table, you can also take it with you on a trip as a quick meal that will fill you up, and it doesn't need to be kept in the refrigerator because the dressing on it is made up of simple ingredients that tolerate high temperatures.
INGREDIENTS:
• purple cabbage 1/2 head
• carrot 1
• celery root 100 g
• purple onion 1 large head
• yellow sugar 1 teaspoon
• raisins 100 g
• salt to taste
• apple cider vinegar to taste
• pumpkin oil to taste
PREPARATION:
Soak the raisins in water. Cut the purple onion into thin strips, add salt, add yellow sugar and pour vinegar over it. Mash the spicy onion with your hands so that it absorbs the spices well and let it stand for 10 minutes in a bowl. Finely grate the cabbage, and cut the carrot and celery into thin strips or coarsely grate them.
Put the cabbage in a large bowl, salt it and mash it a little with your hands. Add the onion and mix everything well with a wooden spoon. Finally, add the carrot and celery, cover with oil and mix all the ingredients together. Drain the raisins from the water and add them as decoration to the salad.
