Gastronomic enjoyment from the skilled hands of Bobe Jankoska: Baked zucchini meatballs

Jovanka Jankoska Bobe, who is behind the blog bobesbakery.mkFacebook и instagram profile, is a true culinary creative – her recipes are a treat for both the eyes and the palate.

Today, Bobe shares a recipe for a real gourmet delicacy – baked zucchini meatballs.

- These baked meatballs are juicy and full of spring flavors, and quick and easy to prepare - says Bobe.

Ingredients needed:

  • 2 zucchini
  • 2 eggs
  • 3 large spoons of flour
  • 3 cloves of garlic
  • half a bunch of chopped parsley
  • a teaspoon of spices
  • salt if desired
  • pepper as desired

Preparation:

The peeled zucchini are grated, salted and put in a colander to drain. Eggs are beaten, then grated drained zucchini, flour, mashed/grated garlic and parsley are added to them.

Season to taste and mix everything together. Place one large spoonful of the mixture in a casserole dish on greaseproof paper, with a distance between them, and bake for 15-20 minutes in a preheated oven at 220°C.

I served them with sauce. In a deep bowl, mix 4 tablespoons of sour cream, 2 tablespoons of mayonnaise, cut into small cubes, 3 pickled cucumbers or one canned beet.
