Nadezhda Shodan is one of those characters on instagram whose food photographs are a joy to all the senses, an inspiration to the palate and a balm to the soul. Nadezhda enjoys cooking, and today she shared her favorite and truly unique recipe.
- 1 cup beans
- 1 medium onion (or a few young onions)
- 1 garlic
- 1 lemon or green lemon
- 2 tablespoons olive oil
- 1 teaspoon salt
- Fresh herbs (bunch parsley, mint, dill, basil, coriander)
- For the buns:
- 1 cup sour milk
- 1 cup flour (half white, half whole wheat)
- 1 garlic
- 1 tablespoon baking powder
- To coat the buns:
- One tablespoon of melted butter
- One tablespoon of olive oil
- One chopped garlic
- Slightly chopped parsley
The beans are soaked overnight, then strained and boiled the next day, until the grains are soft - but not too much, the whole grain should remain.
Put the remaining ingredients for the green sauce in a blender or chopper, and mix until you get the desired consistency. If you want a smooth sauce, blend longer.
Add a few tablespoons of the sauce to the cooled beans, mix and serve.
For the buns, put the sour milk in a deeper bowl, the garlic passed on the press, the pastry, then the flour. First mix with a spoon, then transfer to a floured surface and add flour to knead a soft dough. Immediately divide it into 6 equal parts and break each part, but not too thin, because they will tear. Bake in a non-stick pan, nicely heated, for a few minutes on both sides, until golden brown, then immediately coat with a mixture of butter, garlic and parsley.
