Homemade Oatmeal Cookies
Oats are among the healthiest cereals you can find on the market. It is a really rich source of micro and macronutrients and an excellent source of vegetable fiber. The nutritional composition of oats is well balanced. This means that it is a good source of complex carbohydrates, but also of fiber, including perhaps the most powerful fiber, beta-glucan.
Besides being a great dessert idea for cold winter days, these oatmeal cookies are doing your body a favor by offering a healthy version of a snack.
Ingredients:
- 2 eggs
– 2 cups of oatmeal
- 1,5 cups flour
– 1 softened butter
– brown sugar as desired
- a little vanilla extract
- 1 teaspoon of baking soda
- 1 teaspoon of cinnamon
– ½ teaspoon of baking powder
- XNUMX½XNUMX teaspoon salt
Preparation:
In a large bowl, combine brown sugar, butter, eggs and vanilla extract.
In another bowl, mix flour, cinnamon, baking soda, baking powder and salt and gradually add this mixture to the butter mixture. Finally, add the oatmeal.
Preheat the oven to 180 degrees and shape the cakes with a spoon or in your hand and place them on baking paper. Bake for 10 to 12 minutes until the cookies are golden and then take them out and leave them to cool.
You can also add pieces of dark chocolate, dried fruit or crushed almonds to the cookies.
