A delicacy from the hands of Stefanija Nestorovska: Hazelnut truffles (raw)

Ingredients:
• 1+1/4 cup (170 grams) hazelnuts
• 1/3 cup (40 grams) cocoa powder
• a little salt
• 1/3 cup (100 grams) of maple syrup
• a little vanilla, if desired
• 9-10 hazelnuts
For topong:
• 1/2 cup chocolate chips (85 grams) or 1 whole dark chocolate, finely chopped
• 1 teaspoon of coconut oil
• 1/2 cup (70 grams) hazelnuts, finely ground
Preparation:
1. Heat the oven to 160 degrees and add the hazelnuts to the baking paper. They are baked for about 10 minutes, but check them carefully because they burn quickly.
2. Add them to a blender and grind them finely.
3. Add the ground hazelnuts to a bowl together with the cocoa and a little salt. It is stirred.
4. Add the maple syrup and vanilla, if using, to this mixture and mix well until the mixture is combined. The mixture should be easily shaped and stretchable.
5. Form 9-10 balls from the mixture and add a whole hazelnut to each ball. Leave the crackers in the refrigerator while we prepare the topping.
6. Add the chocolate and coconut oil to a small pot at a very low temperature. Allow to melt with occasional stirring.
7. Melt all the pretzels in the chocolate, then in the ground hazelnuts. They are left in the refrigerator (or freezer) to harden (about 30 minutes).
8. They can be consumed immediately or stored in a closed, glass container in the refrigerator for up to 10 days or in the freezer for up to 2 months.
