Let's send the summer and its flavors: Menemen – a Turkish specialty for breakfast or lunch
Menemen is a traditional Turkish dish made of tomatoes and peppers, prepared in a similar way to a summer egg casserole. Depending on the tastes, you can add cheese or sujuk. It is often eaten for breakfast, and if it is prepared for lunch, it is customary to add onions.
Ingredients:
- 4 eggs
– a piece of ginger root
- 4 cloves of garlic
- 1 onion
– 2 large tomatoes
– 1/2 cup of tomato sauce
– 1/2 hot pepper
– 1/2 pepper
– 2 teaspoons of ground pepper
- 1/2 teaspoon oregano
– salt, pepper, olive oil, chives
Preparation:
Blanch the tomatoes and peel them. Heat the oil in a pan, add the chopped garlic and ginger and fry until soft, then add the chopped onion. When it becomes translucent, add the peppers. Add the sliced tomatoes and leave for two minutes, then add tomato puree and other spices except chives. When the tomatoes are ready, break one egg into the pan and after ten seconds, gently mix them into the mixture. Serve with chives.
