Baba Ganush: The most famous prayer in the world

Baba Ganush is one of the best and most famous prayers in the world. It originates from the Middle East, but like many other dishes, it has its variants from region to region. The Arabic Mutabal is very similar to him if not identical. In Israel, a similar dish is prepared with mayonnaise.
It is prepared from eggplant, garlic and tahini cream, and it is most delicious if the eggplant has been "smoked" a little over a fire or flame on a gas stove. If you do not have a fire, you can easily fry it in a pan or simply prepare it immediately in the oven together with the peeled garlic.
This dish is ideal for parties and is served in a larger plate and eaten with white bread or buns.

Steps
Step 1
Using a fork or a thin knife, pierce the eggplant in several places (so that it does not crack during cooking) and bake it on the fire on all sides. If you do not have a flame, put it under the grill in an oven preheated to 200 degrees and bake together with the peeled garlic until it darkens and the inside is completely soft (test with a fork). You will need about 40 to 50 minutes.

Cut the eggplant in half on a board, cut all the meat and put it in a bowl. The bark is thrown away. Add a little salt and leave for about 10-15 minutes, then drain the excess liquid. Peel a squash, grate it and chop it in half with a knife or fork. Add tahini and oil and add a little salt. Mix everything well and check the taste.
